Lemon curd,  is called Lemon Spread or Lemon Butter in Australia<\/strong><\/span><\/td>\n<\/tr>\n

A real Aussie variant is Passionfruit Butter with, you’ve guessed it Passionfruits!<\/span><\/p>\n

However we are not that in love with Passionfruits <\/p>\n

so we stick to  our British family recipe handed down by my Mum…delicious on crumpets.<\/td>\n<\/tr>\n

Fresh lemons from the garden<\/td>\n<\/tr>\n<\/tbody>\n<\/table>\n
We’re not that much into cooking in our house. Eating yes, that’s a completely different thing. <\/div>\n

We don’t have an allotment or a veggie patch in the garden, but we can boast of an abundance of lemons! <\/div>\n
 <\/div>\n
My neighbour told me we have the street’s gin and tonic (lemon) trees, the previous owners were always very hospitable and generous handing out lemons to the whole street. <\/div>\n
 <\/div>\n
Gin and tonic is not so much in vogue now and with our ever increasing bounty, Lemon Curd production is in full swing…<\/div>\n

Gently melt the sugar, butter & lemons<\/td>\n<\/tr>\n<\/tbody>\n<\/table>\n

Last weekend the Lemon Curd became a no cook Lemon Pie, when we were entertaining new neighbours to the street. Here is the recipe that everyone asked for – come round and help yourself to lemons! <\/p>\n

Grannie’s Lemon Curd <\/h1>\n
170 gms (1 cup) sugar<\/div>\n
2 Eggs<\/div>\n
2 large lemons<\/div>\n
110gms (1\/2 cup) butter or luxury margarine<\/div>\n
 <\/div>\n
Grate the rind carefully, removing just the yellow area<\/div>\n
 <\/div>\n
Squeeze juice from the fruit<\/div>\n
 <\/div>\n
Put all ingredients, except eggs into double saucepan, or basin of hot water and cook<\/div>\n
 <\/div>\n
Stirring from time to time until butter and sugar have melted.<\/div>\n
 <\/div>\n
Add the well beaten eggs and continue cooking until the mixture coats the back of a wooden spoon<\/div>\n\n\n\n\n

Warm jars in the oven<\/td>\n<\/tr>\n<\/tbody>\n<\/table>\n
Pour into hot jars and seal.<\/div>\n\n\n\n\n

Choose your prettiest Jam Jars<\/td>\n<\/tr>\n<\/tbody>\n<\/table>\n

Rustic no bake Lemon Pie<\/h2>\n
225g (3 cups) crushed Digestive biscuits<\/div>\n
150g (2\/3 cup) melted butter<\/div>\n
Pinch of cinnamon and nutmeg to taste<\/div>\n
Jar of lemon curd<\/div>\n
 <\/div>\n
Melt butter into crushed digestive biscuits, cinnamon and nutmeg<\/div>\n
Press firmly into the base of a pie dish and refrigerate for one hour<\/div>\n
Add lemon curd and refrigerate overnight<\/div>\n
Dust with icing sugar and serve!<\/div>\n

Perfect with Australian Afternoon Tea and Scones!<\/div>\n
Apparently it will last up to two weeks in the fridge (if you are lucky)<\/div>\n
And the best bit of all about the Lemon Curd and the Lemon Tart is that it’s not me that makes it!<\/div>\n
